Hass Avocado,Black Bean and Pineapple Salad Recipe (vegan)
Recipe developed by Chef Sue Torres - New York
Salad Ingredients
1/2 Cup Black Beans, cooked
1 ripe Hass Avocado
1/4 Cup Pineapple, diced
1/4 Cup Cured Red Onions
1 Tbsp Cilantro Puree
1 Tbsp Chipotle Sauce
1 1/2 Tbsp Lime Juice, fresh squeezed
Coarse Salt and Pepper to taste
Tortilla chips to serve
In a stainless steel bowl combine all of the above.
Cured Red Onions Ingredients
2 Red Onions, thinly sliced
2 Cups Lime Juice, fresh squeezed
1/4 of 1 Habanero Chile, minced
Coarse Salt, to taste
Place the sliced onions in a small container and pour the lime juice on top of onions. Add the salt and habanero chile and mix. Cover tight and let sit in the refrigerator for three days.
Cilantro Puree Ingredients
1 Cup packed Fresh Washed Cilantro (fresh coriander leaves)
1/2 Cup Lime Juice, fresh squeezed
1 Cup Oil, vegetable or corn
2 cloves Garlic, roasted
1/4 Cup Onion, roasted
Coarse Salt, to taste
In a blender puree everything but the oil. While the blades are moving, add the oil slow stream. Pour into a squirt bottle.
Chipotle Pepper Sauce Ingredients
2 cloves Garlic, minced
2 Shallots, minced
2 1/2 Tbsp Chipotle, pureed
3 Red Peppers, roasted, peeled, seeded & diced
1/4 Cup Lime Juice, fresh squeezed
1 Cup Oil, corn or vegetable
Salt and Pepper to taste
In a bowl, whisk all ingredients together. Pour into a squirt bottle.
Presentation
With a squirt bottle, drizzle a line or two of the Chipotle Pepper Sauce and the Cilantro Puree on to a plate.
Place two tablespoons of the salad in the center of the plate. Top the salad with one tortilla chip. Fill the tortilla chip with one large teaspoon of salad and serve.

How do you make Tofu Tasty?
How to marinate tofu to make it tastier? Simply make a marinade. Here is a good one. Equal parts good quality tamari, a sweetener such as maple or rice syrup, mirin (a sweet cooking vinegar), water, fresh garlic and ginger. Marinate for several hours before using any method of cooking the tofu. I'd suggest baking slices or cubes of tofu before I would frying as healthier and easier for you.
After eleven years in business, Real Food Daily is now a staple for Southland health nuts. It's one of the few places in LA that specializes exclusively in creating Vegan food. The West Hollywood location is not only Vegan but Kosher-certified. Most people cringe at either word-thinking somehow healthy food can't be fun. RFD is here to prove them wrong.
When you first glance at the menu, you'll be surprised to see items like Total Reuben, TV Dinner and Burrito Supreme alongside Lentil-Walnut Pate, Hummus & Pita and BBQ Tofu Chop. Vegan - Just the Very Donkeys!
It's like The World just woke up! It seems wherever you look people have worked out that Veganism is "just the very donkey's" (Just the Job)
The solutions that veganism has to offer are not new, Donald Watson invented vegan movement back in November 1944. We seem to have suddenly reached critical mass all around the world people are picking up these 60 year old ideas and running with them.
Nutritionists are discovering veganism - "New research has shown that vegan chocolate is better for you than milk chocolate" says London Nutritionist Yvonne Bishop-Weston.
Scientists are discovering Veganism - "livestock animals bred for their meat produce 21 per cent of the carbon dioxide that's due to human activity. So cutting out meat can do more to stop global warming than cutting down on oil and coal" says British Scientist Alan Calverd in Physics World Magazine
Human Rights campaigners are discovering Veganism "As a meat-eater, I’ve long found it convenient to categorise veganism as a response to animal suffering or a health fad. But, faced with these figures, it now seems plain that it’s the only ethical response to what is arguably the world’s most urgent social justice issue." says the Guardians' George Monbiot

Barbie's Vegan BBQ Barbecue Tips
16 Vegan BBQ recipes
1)Safety – Be Patient The BBQ should be a gentle glow not an eyebrow-removing inferno that produces carcinogenic cremated offerings. Always follow BBQ manufacturer's instructions. The BBQ area should be protected from the wind with dogs, cats and children kept safely away.
2)Vegan Sausages - Visit your local health food store and ask about the latest vegan delights suitable for BBQs or see The Animal Free Shopper.
3)Salads - Make sure you have lots of fresh organic salads. Use egg-free mayonnaise, Omega 3 oils and balsamic vinegar for dressings.
4)5 a Day - Vegetables can be BBQ’d too - marinated organic vegetable, fruit and tofu kebabs, corn on the cob, sweet potatoes, pumpkin and waffles.
5)Desserts - try BBQ’d banana with some yummy vegan Ice cream and maple syrup, agave or date syrup. Get some dairy free vegan choc-ices.
6)Plan ahead - Make sure you have a plan B in case it rains.
7)Mosquitoes - Get some citronella or Lavender candles to deter insects.
8)Drinks – Ensure an ample supply of gelatine/isinglass free organic beer and wine and some nice non-alcoholic drinks for the BBQ chef, drivers, kids and the others.

10)Preparation - Avoid worry and forgetting things by making a list. Delegate tasks so that you can relax and enjoy yourself. If you plan to use fireworks please try to be considerate of the animals - fireworks going off all the time upsets the both the local wildlife and pets.

Cauliflower and asparagus tart - BBC From Vegan
BBC - Food - Recipes - Cauliflower and asparagus tart:
Ingredients
For the pastry
300g/10oz self-raising wholemeal flour
1 tsp vegan bouillon powder
125ml/4fl oz rapeseed oil
125ml/4fl oz rice milk or soya milk
For the filling
olive oil, for oiling and frying
1 medium cauliflower, broken into florets
125g/4oz asparagus, trimmed and washed
2 red onions, chopped
50g/2oz shiitake mushrooms, sliced
125g/4oz frozen sweetcorn, mashed
250ml/8fl oz sweetened soya milk
250ml/8fl oz rapeseed oil
1 lime, juice only
2 tbsp porridge oats
2 dessertspoons vegan bouillon powder
2 tbsp vegan tomato sauce
1 tbsp Dijon mustard
smoked paprika
freshly ground black pepper
Method
1. Oil a 30cm/12in flan or pie dish. Preheat the oven to 180C/350F/Gas mark 4.
2. To make the pastry, place the flour and bouillon powder in a bowl and rub in the oil, then mix in the milk. Knead the pastry gently for a few moments, then roll out on a floured surface and use it to line the prepared dish. Bake for 10-15 minutes, until just cooked through.
3. Meanwhile, steam the cauliflower and asparagus until hot but not cooked - about 4-5 minutes.
4. Heat a little olive oil in a frying pan and fry the onions and mushrooms until soft. Add the mashed sweetcorn and stir until hot.
5. Heat the soya milk in a saucepan until hot but not boiling. Transfer to a food processor or liquidiser, add the rapeseed oil, season with pepper and mix well. With the machine still running, add the lime juice and mix thoroughly to prevent curdling.
6. Add the oats, bouillon powder, tomato sauce and mustard to the milk mixture and blend again.
7. Oil the inner base of the pie crust, then spread a thin layer of the oat mixture over it. Place a layer of the mushroom mixture on top, then a layer of the cauliflower, followed by the remaining oat mixture.
8. Arrange the asparagus spears on top and sprinkle with smoked paprika. Return the tart to the oven and cook for a further 20 minutes. Serve with a green salad.

Blueberry Corncakes (pancakes)
Ingredients
1 1/4 cups whole wheat pastry flour, divided
3/4 cup cornmeal
1 1/4 t. baking powder
1/2 t. baking soda
1/4 t. sea salt
1 1/3 cups soy milk, rice milk, or other non-dairy milk of choice
1/2 cup apple juice or water
10 oz. fresh or frozen blueberries
safflower oil
Method
Place 2 T. of the whole wheat pastry flour in a medium bowl and set aside. In a large bowl, place the remaining whole wheat pastry flour, cornmeal, baking powder, baking soda, and salt, and stir well to combine. In a small bowl, place the soy milk and apple juice, and whisk well to combine. Add the wet ingredients to the dry ingredients and stir until just mixed. Place the blueberries in the medium bowl with the reserved whole wheat pastry flour and gently toss to thoroughly coat the blueberries with the flour. Gently fold the blueberries into the batter.
Using a little safflower oil, lightly oil a large non-stick skillet (or griddle), and place it over medium heat. Using a 1/4 cup measuring cup, portion the batter into the hot skillet, and cook until the corncakes have bubbles on top and the edges are slightly dry, about 3 minutes. Using a spatula, carefully flip over the corncakes and cook an additional 2-3 minutes or until golden brown. Transfer the corncakes to a non-stick cookie sheet and place in a 200 degree oven to keep warm while continuing with the remaining batter. Lightly oil the skillet again with a little safflower oil and repeat the cooking procedure for the remaining batter. Serve the corncakes with your choice of jams, preserves, syrups, or fresh fruit.
Yield: 16 pancakes"

Stamford Today: News, Sport, Jobs, Property, Cars, Entertainments & More: "Since he first became aware of animal rights issues and gave up eating meat seven months ago, the Uppingham Community College pupil has done all he can for the cause.
He campaigns against animal experimentation, intensive farming and bloodsports, and supports wildlife conservation, animal rescue and welfare organisations. In that time he has also lobbied the Prime Minister, set up library displays, become involved with street stalls and written articles for vegetarian publications.
And after giving up dairy products in March to become a fully-fledged vegan, Sam began working on a guide to vegetarian food in Rutland.
The newly published handbook, launched both in print and on line, is designed to help fellow veggies make the most of the county.
Sam, of Braunston Road, Knossington, said: 'The idea was also to make shops, restaurants and businesses think about what they are offering to vegetarians and vegans, and to help promote the area to the vegetarian community.'

This is the one I teach at McDougall program and use all the time -great for potato salad with lots of dijon. Vit C makes it nice and tart - more like a sour cream than a mayo.
Ingedients
1 Pkg firm or extra firm silken tofu
1000 mg of vit C, crushed
1 tsp onion or garlic powder
1 tsp yellow mustard
the juice of 1 fresh lemon
Method
Puree all in food processor. Add Dijon mustard for a great dipping sauce for artichokes or asparagus or sandwich spread."
